Care For Some Tofu Nugs?

Groceries! Groceries, groceries, GROCERIES! Awww, what a wonderful thing to wake up to. Although, I do enjoy cleaning out the fridge, freezer and cupboards. Makes me feel good knowing that we’ve eaten the food I’ve bought! And I just love to “start over” and reorganize food. But, it make it difficult to do a food blog. =)

Usually he loves this little concoction. He was not having it this morning though. As Harold would say, it wasn’t “on the list”.

Rue had this for b-fast

He was not a fan. I tried to give it to him again at dinner and he was making the most hilarious faces, then finally figured out that if he just didn’t open his mouth, I wouldn’t put it in. I think I’m gonna try and give the rest to Harrison tomorrow. I’m sure he’ll eat it. =)

We took another nappy nap this morning. This is becoming quite the habit. It’s working for the time being though! I would rather stay up late and get some real alone time/a break, and catch a little snooze during their nap.

Ruben in the pool

Ruben was HILARIOUS in his lobster. Moving himself all around the pool- he thought he was rather cool.

A good time was had by all. I got an email today saying I won a sprinkler (on a blog) so I’m excited to get that and try it out next time!

This evening I spent 3 hours in the kitchen making dinner, and a few puree’s. I actually had a lot of fun- Michael Buble Pandora station was on and the boys were playing so well together. My only interruption was a little dance party with Mr. HP. =)

I made “Tofu Nuggets”. I’d give them a 5 out of 10. Kind of bland. Harrison seemed to enjoy them though!

They were really easy.

I steamed some carrots for  a little bit, just to soften them up for HP.
He loved them! (don’t mind the broccoli- I steamed some for my salad)

I ended up giving him some ranch, since the nuggets were bland and he had some raw veggies. I was trying to avoid it, since of course he mostly just licked the ranch. After I showed him a few times how to “dip and eat”, he was doing it a little.

  • Cucumber

Tofu Nuggets

INGREDIANTS:

1 package firm tofu
1/4 cup flour
1 egg equivalent (2 whites or your favorite sub)
1 cup fine dry bread or cracker crumbs
1 teaspoon garlic salt
1 teaspoon paprika
1 dash or a few grinds of pepper

DIRECTIONS:

  1. Cut tofu into your fav configuration (fingers)
  2. Spread flour on a small plate or flat dish
  3. Beat egg in a shallow dish
  4. Mix remaining ingredients in shallow dish
  5. Turn each piece of tofu in the flour to cover it, then into the egg, then crumbs, then to the rack. Chilling will help to set the coating, but you can just bake right away.
  6. Bake at 350 for 15-20 minutes until crisp. Serve with dipping sauce.

If you have older kids, this would be a fun one to make together. The “assembly line” of dipping them is really quite enjoyable!

  • Sandwich (yes, I had a sandwich for breakfast. I’m not really a breakfast person) – 5 points
  • Lean Cuisine BBQ Chicken Quesadilla (YUM!) – 5 points
  • HUMONGO Salad – 6 points
  • HEB Wasabi Crackers & Hummus – 4 points

Total: 20 points

This is pretty good since my coupons aren’t organized at all, and I had both the boys there with me.
